This recipe belonged to my great grandmother, Kezia Baxter. It has been lovingly passed down through four generations, having most recently been included our first family cookbook with a place of honor. I remember enjoying delectable pieces of this cake in her cozy little kitchen on many occasions when we would stop and visit. No recipe I have found has ever compared, but you have to be sure to follow it EXACTLY!
Cream together:
1 ½ c. sugar
½ c. shortening
2 eggs
Mix together and add to egg mixture:
1 c. milk
¼ t. salt
Sift together and add to egg mixture and mix:
2 C. flour
2 Tbps. Cocoa powder
Mix together:
¾ c. hot water with 2 tsp. baking soda and add to cake batter. Stir.
Pour batter into prepared pan. Bake at 350 degrees for 30 minutes. Cool before frosting.
Frosting:
Mix until very well blended:
½ c. very soft butter
Pinch of salt
2-3 Tbsp. Cocoa powder
Add:
1/3 c. HOT water
Slowly add 4 cups powdered sugar, beating well between additions.
