Grandma's Devilin' Eggs

A year ago today I was with my Grandma Pearl as she took her last breath and left this world. It was an awesome experience for me. She was peaceful and comfortable and just kind of slipped away. As I spent the last hours of her life with her in a sterile hospital room, I thought of how my memories of this woman were not of  cold, medicinal things at all, but of warmth and fun and food. 

Grandma was a southern woman. She loved to feed people. Her kitchen was a magical place... especially on Sunday. You'd walk in to the  smell of fried chicken, fried apple pies and  palmolive dish soap! 

One of her specialties was deviled eggs. All the grandkids requested she make them whenever we gathered. She knew we loved them and she was happy to supply.

After years of making them myself ,I found a great way to make the job a little easier. 

Put the cooked egg yolks into a zip lock bag. Seal the bag and mash until all the yolks are broken up. Add remainder of ingredients according to your deviled egg recipe.Keep mashing it up until all contents are mixed thouroughly.

Now comes the really fun part --  with a pair of scissors, snip off a small corner of the bag and you are ready to squeeze the egg mixture into the hard boiled whites.  (Kind of like piping frosting onto a decorated cake!  Get the idea? ) Once the eggs are filled, just throw away your used bag. No mess to clean up, no dishes to do, no fuss! 

A new idea for a  family favorite! Grandma would be proud!
