Beverly Nye's Apple Torte Cake

This recipe is a family (and friends) favorite. It came from my mom’s friend, Beverly Nye. My mom made it when I was a kid and our family always gobbled it right up. Mom and I both admit that we could make the cake now and eat the whole thing –just the two of us! It is so good and moist that it is delicious with or without the caramel topping. It is one of our family’s favorite ways to eat apples!

Cream:

2 c. sugar
1 stick margarine

Add:

2 eggs.

Beat well, then add:

4 c. grated apples

Add:

2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
½ tsp. nutmeg
1 c. chopped nuts

Bake in a 9x13 inch glass pan at 350 for 45 minutes. Store in the refrigerator (IF YOU HAVE ANY LEFT!) Caramel Topping 2 Tablespoons butter 2/3 c. packed brown sugar 1/8 tsp. salt 1/3 c. evaporated milk ½ tsp. vanilla Heat butter in 2 quart saucepan until melted. Stir in brown sugar, salt and evaporated milk. Heat to boiling, stirring constantly. (Boil while stirring for several minutes if topping needs to thicken.) Remove from heat. Stir in vanilla.
